Summer has officially begun in Italy and I am as always trying new recipes. As you know I love to rediscover the simple ingredients of the Italian culinary tradition and for a special lunch I made Paccheri with Broad Beans and Shrimp. Everyone loved them, and I am sure you will too!

Here is what you need for this recipe:

The first step is to clean the broad beans and sautè them in a pan with extra virgin olive oil.

Separately clean the shrimp - leaving some whole to decorate. Add the shrimp to the pan with the broad beans, garlic and pepper.

Once the shrimp are pink, add the fresh tomatoes and salt. Cook for about ten minutes and…The sauce is ready!

Blend the arugula with a drizzle of olive oil in a mixer to make a fresh rocket pesto.

Cook the pasta in a large pot - Paccheri are perfect for this recipe - and transfer it to the pan with the sauce to mix well before serving it.

I added the fresh rocket pesto to the dish and then created a beautiful composition with the Pacchery and the shrimps!

Did you know…

For this Pasta with Broad Beans and Shrimps, I choose Vicidomini’s Paccheri. This pasta format was invented in Napoli and is very popular for fish dishes and rich sauces. Its big format makes it perfect for collecting as much condiment as possible, making every bite super satisfying!

What other recipes do you know that are perfect with Paccheri?
