One thing I love about the holidays is the warm smell of something good cooking in the oven welcoming you to a lunch or dinner party. 

This year I will be making this Stuffed Beef Rollfor my family and, since this recipe is such a success every time I make it, I want to share it with you as well!

For this delicious Christmas recipe you will need: 

A big beef Braciola in one piece (1,2/1,5 Kg)
15 slices of Cooked Ham
15 slices of Emmental Cheese (you could also use Caciocavallo, mild Auricchio, or Galbanone)
1 red bell Pepper
Salt, to taste
Pepper, to taste
Butter, as needed
Olive Oil, as needed
2 Garlic cloves
2 Carrots
Parsley
½ Onion

Let’s get cooking


Wash and julienne the red bell pepper, prepping all the other ingredients for the filling.

Separately, lay out the beef, season it with salt and pepper, and start layering the slices of ham, cheese, and finally, the bell pepper.

Fold and tie the braciola, then sear it in a pan with olive oil and garlic. Transfer the roll to a casserole dish with the aromatic vegetables (carrots, onion, and parsley) and add some water.

Sprinkle the beef roll with a few flakes of butter and a dusting of salt. Cover with a lid and let it cook in the oven at 200 degrees Celsius. The cooking time varies depending on the weight of the braciola, approximately 1 hour for every kg of meat.

Once cooked you can serve it with a side of vegetables of your choice: I served mine with a side of peas and carrots, and everyone loved it!
