During the festive season, the joy of preparing a special meal for the entire family inspires me to try new recipes. Christmas is a time when the kitchen transforms into the heart of the home, each dish becomes an opportunity to share love and happiness. For Christmas Eve this year, I’m making these stuffed Conchiglioni pasta.

Ingredients:

500 gr ricotta cheese
3 eggs
Parmesan cheese, to taste
Cooked spinach, approximately 250 gr 
Pepper, to taste
Salt, to taste
Olive oil, to taste
Tomato sauce, approximately 700 gr
1 clove of garlic
Half a chopped onion
Cooking cream
Butter, to taste
Conchiglioni pasta

 

Prepare a light sauté of chopped onions, place them in a pan with garlic and olive oil, let them fry, then add the tomato sauce with a bit of water (use the water to rinse the bottle). Add salt and cook covered for at least 1 hour. Once the sauce is ready, add a bit of cooking cream (approximately 120ml).

In a separate pan, sauté garlic with a drizzle of oil and a knob of butter. Cook the previously washed spinach, add salt, and cook it for about 10-15 minutes.

Boil water for the conchiglioni, add salt, and as soon as it boils, cook the pasta. Consider about 7 conchiglioni per person, cooking a few extra in case some open during cooking. 3-4 minutes of boiling is sufficient. Rinse in cold water to stop the cooking process and add a bit of oil to prevent the pasta from sticking.

Prepare the filling. Mix ricotta with grated cheese, pepper, 3 eggs, and chopped spinach in a bowl. Mix well and transfer the filling to a piping bag to fill the conchiglioni.

In a baking dish, spread a few spoonfuls of sauce (preferably slightly liquid, not too dry), then place the stuffed conchiglioni on top. Cover with more sauce, sprinkle with Parmesan, and bake in the oven at 200 degrees Celsius for 20 minutes.
