This simple and super savory recipe is a favorite of mine to make something unexpected with a delicious vegetable: Savoy Cabbage!


The big green leaves of this Cabbage variety are perfect to create these fun rolls and the filling is, as usual, customizable to fit your tastes. Here is my family recipe, what ingredients would you add to the mix? 


Let’s get cooking:


500 gr of Minced Meat
3 Zucchini 
4 Champignon Mushrooms 
3 Eggs 
Parmesan Cheese (to taste)
2 slices of Bread soaked in Milk
Pepper, Parsley and Garlic (to taste)
EVO Oil
Bread crumbs (about 3 tablespoons)
Vegetable Broth  
15 big Cabbage Leaves


We start by boiling the cabbage leaves for about 2-3 minutes and draining them. In a bowl, let the bread soak in milk while we get the other ingredients ready.


Sauté the minced meat in a pan with a drizzle of EVO oil, a clove of minced garlic and salt for about 10 minutes, until the meat juices have dried. To finish off, add half a glass of white wine and once the alcohol has evaporated set the meat aside.


Let's move on to the vegetables. Wash, chop and sauté the zucchini with one clove of garlic and salt. Follow the same process for the mushrooms: clean and cut them and over medium heat in a pan let them lose their vegetation water to prevent them from blackening, finally add garlic, oil and chopped parsley to sauté. 


Combine the vegetables with the meat and, once cold, add the bread softened in milk and the eggs lightly beaten with salt and pepper. Mix everything adding grated Parmesan cheese and, if the stuffing is too soft, breadcrumbs to soak the moisture. The stuffing is ready!

To create the rolls, arrange a savoy cabbage leaf on a cutting board, place about two soupspoonfuls of stuffing in the center and form a roll, and arrange all the rolls in an oven dish. 

To finish off, pour the vegetable broth(prepared earlier) to cover about half of the rolls, sprinkle with Parmesan cheese, a pinch of salt and finish with a drizzle of oil. Cover with aluminum foil and off to the oven at 180 degrees for about 1 hour. 

The Savoy Cabbage Rolls are ready and delicious!
