Onions are a “poor” ingredient that is easy to find and not expensive at all, and yet they seem to make every recipe better!

Even on their own, there are many surprising recipes giving onions the protagonist’s role on our table: today I want to share a perfect autumn recipe. This simple red onion jam is perfect to accompany your cheese board for an Italian Aperitivo, or to add a delicious and unique taste to a fragrant bruschetta. You only need four ingredients and some clean glass jars!


Ingredients for 12 small jars

•1,5 kg red onions
•550 gr cane sugar
•150 ml balsamic vinegar
•4/5 bay leaves

 

Finely cut the onions and place them in a container with the sugar, vinegar and bay leaves.
Let them macerate for 2/3 hours, stirring from time to time.

Move the onions in an ample pan and cook for about 1 hour, always stirring the mixture to prevent it from sticking. Halfway through cooking, remove the bay leaves.

Turn off the heat when the compote has reached a dense and caramelized consistency. While the mixture is still boiling, pour the jam into the previously sterilized airtight jars, close them and turn them upside down onto a cloth until they have cooled completely.


Pro tip: If you prefer a smoother consistency you can blend the compost lightly with an immersion blender.
