Mushrooms, truffles and more!

Autumn is an amazing season for wild foods, especially for those that need more rain to grow.

 

Truffles and mushrooms are specially delicious in this period of the year, so let’s discover more about them and how we can use them in our kitchens!

 

Tartufo is a kind of fungus that develops underground. The word truffle comes from latin and it was known as a food since ancient times. A legend says that truffles are born where thunderbolts thrown by Zeus meet the earth!

 

Some truffle species are highly prized as food and are known as "the diamond of the kitchen”. The two most known truffle species are white and black. Il Tartufo nero - black truffle - gives its best when cooked, while Tartufo bianco - white truffle - has a stronger aroma when used raw on hot or cold meals.

 

A large percentage of Italy's white truffles come from Molise where we met Le Ife for the first time. Their experience in finding, harvesting and cultivating truffles goes back for generations and their products are perfect for this season!

 

Mushrooms are also fungus but they grow overground. Harvesting mushrooms has the feeling of going on an adventure to dig up a treasure! There are so many species and recipes featuring mushrooms that we could fill an entire cook book just about them but for this season we choose two special products by La Cerignola di una Volta.
