The no-bake king of Italian desserts!

If you asked me which is the best comfort food I would definitely say home-made Tiramisu! This typical Italian dessert is easy to make and delicious. Perfect for every season, it is almost impossible to find anybody who doesn’t love it!

The secret, as always, is choosing good quality ingredients. This is a no-bake dessert so fresh eggs are a must!

Here is my shopping list for the perfect Tiramisu:

300 gr Savoiardi (Ladyfingers) cookies

4 fresh, preferably bio, eggs

500 gr Mascarpone cheese

100 gr sugar

300 ml of coffee from the Moka

cocoa powder to decorate

your favorite chocolate bar or chocolate chips

 

Ok, but first coffee…

I start by making coffee. I like using my Italian Moka for this, the smell of coffee will fill the house and that is already enough to make me smile. I will pour the coffee to cool in a bowl and add some water and sugar if I want to make it less strong.

 

Time to mix the Cream

I separate the yolks from the egg whites in two different bowls then whip the egg whites and set them aside. In the other bowl, I add sugar to the yolks and whip them until they are almost white too, I then add the Mascarpone and, lastly and very gently, I add the foamy egg whites, mixing with a spoon.

 

Building perfection in a spoon

The next step is assembling our Tiramisu. I soak each Ladyfinger in the cooled coffee and create a layer on the bottom of a ceramic baking dish. How much you soak the ladyfingers will determine their consistency and how strong the coffee flavor will be. I like mine to be quite strong!

I then add the first layer of the Mascarpone Cream and some chocolate chips or some chopped chocolate bar nuggets. I like the chocolate chips addition because it gives an extra crunchy surprise to this creamy masterpiece. With these quantities, I usually create a second layer and then top the cream with a good amount of cocoa powder for that perfect Tiramisu look.

 

Patience is the secret

The Tiramisu is ready, but to enjoy it at its best it should rest for a couple of hours in the fridge so that all the ingredients have time to set. I know it is tempting to eat it right away but, trust me it will be worth waiting!
