A simple and tasty lunch, perfect for when you are on the go or need a quick and easy meal: a delicious Piadina is the answer! 

You can find them in our shop (Frescopiada has the original recipe or the vegan one), but today I will share the most simple recipe to make them at home! 

For 6/7 wraps you will need:

MY TIP: You can use the flour you prefer, even whole wheat, but water absorption will change. Be mindful of the dough's consistency and adjust the water quantity!


In a bowl mix all the ingredients with your hands, then knead on a pastry board until the dough is smooth and homogeneous. Wrap it in cling film and let it rest for 1 hour. 

Divide the dough into 6 smaller balls and roll them out with a rolling pin - I prefer them very thin for a perfect Piadina. 

We are ready to cook the wraps in a well-heated non-stick pan: as soon as bubbles start to appear on the surface, gently turn the Piadina and finish cooking on the other side for about 30 seconds.

Note: if the bubbles are too big you can pierce them with a toothpick.

You can store the homemade Piadine in the fridge for 3/4 days in a closed container or freeze them to have them ready when you need them.

I stuffed my Piadina the most traditional way: with stracchino cheese, ham and rocket salad, but they are also excellent with speck and gorgonzola or cheese and vegetables spreads!
