Even in the summer, pasta remains an excellent ingredient for creating delicious and delightful dishes. Here's a simple yet flavorful recipe for spaghetti with clams that's perfect for a summer meal!


Ingredients for 4:


350 gr Spaghetti
2 kg fresh Clams
200 gr Cherry Tomatoes
Extra virgin olive oil
Ground black pepper
Salt
1 or 2 cloves of Garlic
Parsley
Chili pepper

Purge the clams:

Rinse the clams thoroughly under running water, discarding any broken ones. To ensure there is no sand inside, tap each clam on a cutting board with the edge facing down. If dark sand comes out of any clam, discard it. Place the selected clams in a large bowl filled with cold water and a small handful of coarse salt, stir, and let the clams purge. If there is any sand, it will settle at the bottom of the bowl. Rinse the clams thoroughly with cold running water again before cooking.

Prepare the base:

In a large skillet, heat the extra virgin olive oil and add the garlic (either crushed or whole). Add the chopped chili pepper, chopped parsley, and a few clams.

Cook the clams:

In a separate pot filled with water and covered with a lid, cook the remaining clams over medium heat until they open, which will take a few minutes. Once opened, shell two-thirds of the clams, leaving some whole for garnish and save the cooking water for later.

Combine the ingredients:

Add the shelled clams and a handful of yellow and red cherry tomatoes to the skillet. Sauté for a few minutes.

Cook the spaghetti:

Boil the spaghetti in plenty of salted water, draining them halfway through cooking. Add the spaghetti to the skillet and continue cooking adding the clam cooking water. Add the remaining chopped parsley, the shelled clams, freshly ground black pepper, and a drizzle of extra virgin olive oil.

Serve:

Mix all the ingredients and serve this delicious spaghetti with clams, garnishing the plates with the whole clams set aside. Enjoy your summer meal!
