Pumpkins are very popular this time of year: I love to use them to decorate for Halloween but even more, I love to create new recipes with this delicious ingredient!
 
Last year I shared this scary pumpkin risotto, this year I made a super-flavored Gratin Pumpkin!
 

Here is what you need:
 

 
Ingredients for 4 people
 

Clean, peel and cut the pumpkin into slices about 5mm thick.
 
In a spacious baking tray sprinkle some extra virgin olive oil on the bottom. Start layering by placing the pumpkin slices, salted and sprinkled with Parmesan cheese, then add the slices of speck, gorgonzola flakes and a few slices of mozzarella and finish with a drizzle of oil. Repeat this 3/4 times.
 
Finally, on the last layer add only Parmesan cheese, breadcrumbs and a drizzle of oil.


 
Cover with aluminum foil and place in a preheated ventilated oven at 200 degrees for about half an hour, then remove the aluminum foil and let it cook another half hour to create the perfect crunchy top.
