Sadly, summer is ending but this means we are ready to start cooking hot meals again!

Something that we were particularly proud of this year was all the vegetables we were able to grow in our garden and not a single Zucchini or Tomato will be wasted whit this simple recipe. The “End of Summer Minestrone” is a recipe that I learned from my Nonna Maria and it is the perfect dish for when the temperatures start to drop a little at night…

Recipe for 4 people:

Wash and cut the vegetables, place them in a saucepan and cover with water. Let them reach a boil and cook until the water is reduced and the minestrone has thickened. Halfway through cooking, add salt and extra virgin olive oil.

This is a simple but very tasty dish: It can be served with crunchy croutons and fresh chili pepper!

As usual, the secret for great taste is to use good quality ingredients: for example, I like to add a drizzle of extra virgin olive oil and a sprinkle of pepper, others love to add Parmigiano Regiano or other aged cheeses for extra flavor.
