Cavatelli is a type of pasta obtained by dragging cylinders or very small sheets of pasta on a wooden pastry board. It is very widespread in many regions of Southern Italy and the numerous variants depend essentially on the way in which the dragging is performed. Cavatelli Molisani is the variant from Molise, which requires the dragging to be performed by using two fingers.
